Raspberry Chia Pudding with Chocolate Granola is a vibrant, layered breakfast that combines creamy texture, fresh berry flavor, and a satisfying crunch. Made with blended raspberries, coconut milk, and chia seeds, the pudding thickens naturally in the refrigerator to create a smooth, spoonable base. Topped with coconut yogurt and crunchy chocolate granola, it’s an easy make-ahead option that feels both refreshing and filling.

This recipe also offers a variety of nutritional benefits. Chia seeds are rich in fiber, omega-3 fatty acids, and plant-based protein, which help support digestion, heart health, and steady energy levels. Raspberries add natural sweetness along with vitamin C and powerful antioxidants that support immune health. Coconut milk and yogurt provide healthy fats that help promote satiety, while the chocolate granola adds texture along with fiber and nutrients from oats and nuts.

Perfect for meal prep, quick breakfasts, or a nourishing snack, Raspberry Chia Pudding with Chocolate Granola is a simple way to enjoy a balanced combination of fiber, healthy fats, and plant-based ingredients in one delicious layered dish.

Recipe

Serves 4

10 fl oz. (300ml) coconut milk

7 oz. (200g) raspberries, fresh or frozen

4 tbsp. chia seeds

8 tbsp coconut yogurt, to serve

8 tbsp. Chocolate Granola, to serve (Recipe here)

handful of berries, to serve

How to Prepare

Add the raspberries and milk to a blender and blend until smooth.

If the mixture is very thick, add a little more milk and blend again.

Transfer the mixture to a bowl or container. Add the chia seeds and stir well to evenly distribute.

Cover and refrigerate for at least 2 hours, or until thickened.

Remove from the refrigerator and stir well. If the pudding is too thick, add a splash of milk to loosen.

Spoon the chia pudding into serving glasses. Top with a layer of yogurt, then finish with granola and fresh fruit if desired.
