Recipe

Serves 4

1 onion, diced

3 cloves garlic, minced

2 jalapeños, seeded & diced

3 tbsp. chili powder

1 tsp. chipotle powder

15 oz. (425g) can black beans, drained

15 oz. (425g) can kidney beans, drained

15 oz. (425g) can pinto beans, drained

28 oz. (800g) canned diced tomatoes

1 tbsp. cocoa powder

To garnish (optional):

green onions, sliced

cashew sour cream

lime wedges

How to Prepare

In a large pot, heat 1 tbsp olive oil over medium heat. Sauté onion for 7 minutes until soft. Add garlic, jalapeños, and spices. Season with salt and pepper. Cook for 1 minute.



Add beans, tomatoes, cocoa powder, and 12 fl oz (360ml) water. Bring to a boil. Reduce heat and simmer for 15-20 minutes.



Adjust seasoning to taste. Serve with desired toppings.
