Almond-Coconut Flour Protein Cookies

Almond-Coconut Flour Protein Cookies

If there is a more satisfying intersection of wholesome and delicious than a warm, freshly baked cookie built entirely from functional whole-food ingredients, we have yet to find it. These Almond-Coconut Flour Protein Cookies are soft, chewy, and deeply satisfying — and every single ingredient has been chosen with genuine nutritional intention. Gluten-free, naturally sweetened, and packed with protein and healthy fats, these are the kind of cookies that nourish your body as genuinely as they please your palate.

Almond flour forms the tender, golden foundation of these cookies and brings a nutritional profile that refined wheat flour simply cannot compete with. Made from blanched whole almonds, almond flour is rich in vitamin E — one of the body’s most important fat-soluble antioxidants, playing a critical role in protecting cell membranes from oxidative damage and supporting immune function and skin health. It also delivers healthy monounsaturated fats that support cardiovascular health, alongside magnesium, which underpins over 300 enzymatic processes in the body from energy production to nervous system regulation and blood sugar balance. Almond flour’s low carbohydrate content and high healthy fat and protein profile also contribute to a significantly gentler glycemic response than conventional flour, supporting stable, sustained energy rather than the blood sugar peaks and crashes associated with traditional baked goods.

Coconut flour works alongside almond flour to create that perfectly tender crumb while contributing its own impressive functional properties. Extraordinarily high in fiber relative to its volume, coconut flour actively supports digestive health, feeds beneficial gut bacteria, and contributes to the stable glycemic response that makes these cookies a genuinely nourishing choice. Vanilla protein powder rounds out the nutritional foundation of the dough, delivering complete protein to support muscle repair, immune function, and the sustained, stable energy that keeps you satisfied long after the last bite.

Monk fruit sweetener provides natural sweetness with a glycemic impact of essentially zero — making it one of the most considered sweetener choices available for anyone supporting blood sugar balance, metabolic health, or following a low-glycemic nutritional protocol. Unlike many artificial sweeteners, monk fruit derives its sweetness from naturally occurring antioxidant compounds called mogrosides, which have been studied for their own anti-inflammatory properties. Coconut oil contributes medium-chain triglycerides that are metabolized directly into clean, rapid energy, while almond milk keeps the dough perfectly workable without adding unnecessary ingredients.

Optional dark chocolate chips bring a rich finish alongside a meaningful dose of flavonoid antioxidants and magnesium — while dried cranberries, apricots, or sliced almonds offer their own layers of color, texture, and nutritional depth to each batch.

Wholesome, nourishing, and genuinely delicious — these Almond-Coconut Flour Protein Cookies prove that functional baking and real satisfaction belong in exactly the same bowl.

1½ cups almond flour

1/4 cup coconut flour

1 scoop (30g) vanilla protein powder

3 tbsp monk fruit sweetener

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a large bowl, combine the almond flour, coconut flour, protein powder, monk fruit sweetener, baking soda, and sea salt.

In a separate bowl, whisk together the eggs, melted coconut oil, almond milk, and vanilla extract until smooth.

Pour the wet ingredients into the dry and mix until a soft dough forms. Fold in any optional mix-ins.

Scoop and roll into 12 even balls and place on the prepared baking sheet. Flatten each slightly with the palm of your hand.

Bake for 10–14 minutes until the edges are golden.

Allow to cool completely on the baking sheet before serving — they firm up as they cool.
