2 whole oranges

3 eggs

8.4 oz. (237g) honey

10.2 oz. (288g) almond flour

2 tsp. baking powder

How to Prepare

Place oranges in a pot, cover with water, and bring to a boil. Simmer for 25 minutes. Drain and cool.



Preheat the oven to 325°F (160°C). Line or grease a 10-inch cake pan.



In a bowl, whisk eggs and honey. Add almond flour and baking powder.



Roughly chop the boiled oranges (remove seeds but keep peel). Blend until smooth. Stir into batter.



Pour into the pan and bake for 55-65 minutes or until a toothpick comes out clean. Cool 10 minutes before serving.
