Recipe

Serves 4

6.3 oz. (180g) uncooked quinoa

2.1 oz. (60g) spinach, roughly chopped

2 oz. (57g) walnuts, roughly chopped

7.4 oz. (210g) apples, diced

1.4 oz. (40g) cranberries (dried), unsweetened

1.1 oz. (30g) red onion, sliced



Dressing:

1 tbsp. maple syrup

2 tsp. Dijon mustard

How to Prepare

Cook quinoa according to package instructions. Remove from heat; rest 10 minutes. Fluff and season with salt and pepper.

Whisk 3 tbsp olive oil, 2 tbsp apple cider vinegar and remaining dressing ingredients in a jar. Season with salt and pepper.



Toss quinoa with spinach, walnuts, apples, cranberries, and onion. Add dressing; mix gently and serve.
