Recipe
3 Tbsp olive oil, divided
1 large eggplant, cut in half lengthwise
2 cloves garlic
2 Tbsp tahini
1 lemon, juiced
1 Tbsp parsley, fresh
1 tsp cumin, ground
1/2 tsp paprika
salt, to taste
black pepper, to taste
How to Prepare
Preheat the oven to 425° Fahrenheit.
Wash, trim stem, and cut eggplant in half lengthwise.
Peel garlic.
Brush the cut side of the eggplant with some oil and place on a parchment-lined baking sheet, cut side down.
Roast until eggplant is very tender, about 40 minutes.
Remove pan from oven. Use a spoon to scoop the flesh of the eggplant into a food processor.
Add the garlic, tahini, lemon juice, remaining olive oil, parsley, pepper, cumin, and paprika. Blend until smooth and creamy.
Season with salt and pepper to taste.
