Recipe

1 lb (450g) boneless, skinless chicken breast (or thighs), sliced into thin strips

2 bell peppers (any color), sliced

1 red onion, sliced

3 garlic cloves, minced

2 tbsp taco seasoning

2 tbsp olive oil

Lime wedges, for serving

Chopped cilantro (coriander), for serving

How to Prepare

Preheat the oven to 425°F (220°C).

In a large baking dish or sheet pan, combine the sliced chicken, bell peppers, onion, garlic, taco seasoning, and olive oil. Toss everything together until evenly coated and spread out in a single layer.

Bake for 20–25 minutes, stirring halfway through, until the chicken is fully cooked and the vegetables are tender and slightly charred on the edges.
Chicken should be opaque and reach an internal temperature of 165°F (74°C).

Serve hot with lime wedges and chopped cilantro. Perfect with warm tortillas, rice, or salad.
