Recipe

1.25 lbs. (570g) zucchini, halved lengthwise & sliced into ¼-inch half-moons

2 shallots, thinly sliced

8 oz. (225g) white button mushrooms, cleaned & sliced

8 oz. (225g) shiitake mushrooms, stems removed & sliced

1 garlic clove, minced

1 tbsp. fresh thyme leaves, divided

How to Prepare

Heat 1 tbsp. olive oil in a large skillet over medium-high heat. Sauté zucchini and shallots for 15-20 minutes until tender and browned. Season with salt and pepper. Remove from the pan.

Add 1 tbsp. olive oil and mushrooms to the skillet. Cook for 8-10 minutes until browned.

Stir in garlic, 1 tbsp. balsamic vinegar, and ½ tbsp. thyme. Cook for 1 minute.

Return zucchini to the pan, mix well, and warm through. Garnish with remaining thyme and serve. Enjoy your Balsamic Glazed Mushroom & Zucchini!
