Broccoli Pizza Crust

1 lb broccoli, florets, separated

1 cup oat flour

2 Tbsp psyllium husk, finely ground

1/4 cup basil, leaves

1 Tbsp olive oil (or avocado oil)

3 eggs

1 tsp salt

Recommended toppings: 

white bean spread  + kale + olives

pesto  + spinach + fresh tomato slices

How to Prepare

Wash and dry broccoli florets. Reserve stems for another use [shredded for salads].

Preheat the oven to 400° F and line a baking sheet with parchment or a silicon mat.

Add broccoli and oat flour to food processor. Process until broccoli is very finely chopped and incorporated into the flour.

Add in psyllium husk, basil, and olive oil and process for about 1 minute.Add eggs and salt and process until a dough forms [it will be wet].

Add dough to the lined baking sheet and spread into any shape[s] you prefer, making a ridge around the outside to prevent toppings from spilling off. You can use wet fingers or spatula to press/spread dough into shape. Make as thick or thin as you like.

Bake for about 20 mins. until firm and edges are slightly browned.

Remove from the oven and add toppings then return to the oven for another 10 minutes. 

Remove from the oven, let stand for 10 minutes then cut with a pizza cutter and serve.
