Serves 4
1 head broccoli, florets divided in small pieces
1 lb. (450g) cooked chicken breast, chopped
4 tbsp. coconut yogurt
2 tsp. whole grain mustard
1.8 oz. (50g) plant based feta cheese, crumbled (We like Miyokos)
squeeze of lemon juice, to taste
How to Prepare
Steam the broccoli until tender yet still crunchy. Once cooked, set aside to cool.
Place cooled broccoli and chicken in a mixing bowl and mix through the yogurt, mustard, plant feta cheese and lemon juice. Season with salt and pepper to taste.
Serve straight away or store in the refrigerator.
