Recipe

1 pound frozen small scallops, thawed and patted dry

2 ripe avocados

1 orange (zest for scallops, segments for topping)

1 pink grapefruit, segmented

1 lemon, juiced

2 tablespoons olive oil, divided

1 small shallot, minced

2 tablespoons fresh herbs (chives, parsley, or cilantro), chopped

Salt and pepper to taste

Optional: microgreens or watercress for garnish
