2 red onions, thinly sliced
10.6 oz. (300g) kale
10.6 oz. (300g) gluten-free pasta of choice
4 tbsp. tahini
2 tbsp. lemon juice (adjust to taste)
1-2 cloves garlic, minced (optional)
4 tbsp. fresh plant-based pesto
Water (as needed to thin the tahini sauce)
Olive oil for sautéing
Salt and pepper to taste
How to Prepare
Sauté the Onions:
Heat 1 tablespoon of olive oil in a large pot over medium heat. Add the sliced onions and sauté for about 10 minutes until softened and beginning to caramelize.
Cook the Kale:
Add the kale and 3.4 fl oz. (100ml) water to the pot. Cover and cook for 5 minutes, until the kale has wilted.
Cook the Pasta:
