2 red onions, thinly sliced

10.6 oz. (300g) kale

10.6 oz. (300g) gluten-free pasta of choice

4 tbsp. tahini

2 tbsp. lemon juice (adjust to taste)

1-2 cloves garlic, minced (optional)

4 tbsp. fresh plant-based pesto

Water (as needed to thin the tahini sauce)

Olive oil for sautéing

Salt and pepper to taste

How to Prepare

Sauté the Onions:

Heat 1 tablespoon of olive oil in a large pot over medium heat. Add the sliced onions and sauté for about 10 minutes until softened and beginning to caramelize.

Cook the Kale:

Add the kale and 3.4 fl oz. (100ml) water to the pot. Cover and cook for 5 minutes, until the kale has wilted.

Cook the Pasta:

In a separate pot, cook the pasta according to the package instructions. Drain, reserving a little of the cooking water.

Prepare the Tahini Sauce:

In a small bowl, whisk together the tahini, lemon juice, minced garlic (if using), and a bit of water until smooth and creamy. Add more water as needed to reach your desired consistency.

Combine Everything:

Toss the cooked pasta with the sautéed onions and wilted kale. Add the tahini sauce and pesto, mixing well to combine. If needed, add some of the reserved cooking water to loosen the mixture.

Season and Serve:

Season with salt and pepper to taste. Serve warm or at room temperature.

Variation: Adding Chicken

For a heartier meal, you can add cooked chicken. Simply season chicken breasts or thighs with salt, pepper, and your choice of spices. Grill, bake, or pan-sear until fully cooked, then shred or dice into bite-sized pieces. Toss the chicken into the salad along with the other ingredients before serving.
