Crusted Pork Tenderloin

Crispy on the outside, tender and juicy on the inside, this Crusted Pork Tenderloin is a classic that also delivers solid nutritional benefits. Pork tenderloin is one of the leanest cuts of meat, making it an excellent source of high-quality protein to support muscle repair, energy levels, and overall satiety. Using gluten-free crackers keeps this dish accessible for those with gluten sensitivities while still delivering that satisfying crunch. Pan-frying in a blend of olive oil and butter adds flavor while supplying heart-healthy monounsaturated fats from the olive oil. Quick to prepare and family-friendly, this recipe is ideal for a weeknight dinner or a relaxed weekend meal served with your favorite vegetables or fresh salad.

Recipe

Serves 6

1.3 lbs. (600g) pork loin steaks (6 in total)

2 eggs

7 oz. (200g) gluten-free crackers, crushed

How to Prepare

Flatten each steak with a meat mallet or rolling pin. Season with salt and pepper.



Beat eggs in a shallow bowl. Dip each steak in eggs, then in Ritz cracker crumbs. Place on a plate.



Heat a large skillet over medium, add 1 tbsp butter and 1 tbsp olive oil.



Fry half the pork 2-3 minutes per side until golden and cooked through. Add another 1 tbsp butter and 1 tbsp olive oil and repeat with the remaining pork.

Serve with your favorite sides.
