Recipe
3 cans (4.3 oz each) sardines in olive oil, drained (reserve 1 tbsp oil)
2 large eggs, beaten
3/4 cup gluten-free panko breadcrumbs, divided (1/2 cup for mixture, 1/4 cup for coating)
2 green onions, finely chopped
1 tbsp Dijon mustard
2 tsp seafood seasoning blend
Salt and pepper to taste
Cooking spray or 1 tbsp olive oil for brushing

How to Prepare
Preheat the oven to 425°F and line a baking sheet with parchment paper.
In a bowl, mash sardines with a fork, including small bones.
Add eggs, 1/2 cup breadcrumbs, green onions, mustard, seasoning, salt, and pepper.
Mix well and let sit for 5 minutes to allow the breadcrumbs to absorb moisture.
Form into 6 patties about 1/2 inch thick.
