2 eggs
1 green onion, sliced
handful spinach, chopped
1 gluten-free tortilla
2.1 oz. sliced ham
How to Prepare
In a bowl, whisk together the eggs, onion, and spinach. Season with salt and pepper.
Preheat a non-stick skillet over medium-high heat. Add the egg mixture to the skillet and top with the tortilla. Cook for 3-4 minutes, or until the eggs are cooked to your preference.
