Serves 4
For the sauce:
4 tbsp. extra virgin olive oil (EVOO)
2 tbsp. raw honey
1 tbsp. chili powder
3 cloves garlic, minced
½ tsp. sea salt
For the foil packets:
4 wild-caught salmon filets (approx. 6 oz./170g each)
1 zucchini, chopped
1 eggplant, chopped
1 red onion, chopped
Sea salt & black pepper, to taste
4 lime wedges, for serving

How to Prepare
Oven Method
Preheat your oven to 425°F (220°C).
In a small bowl, whisk together the extra virgin olive oil, raw honey, chili powder, garlic, and sea salt. Set aside.
Season both sides of the salmon filets with sea salt.
In another bowl, toss the chopped zucchini, eggplant, and red onion with a little extra olive oil, sea salt, and black pepper.
Lay out four large sheets of foil on a flat surface. On each piece, place a portion of the vegetables on one half of the foil (near the center). Place a salmon filet beside the veggies.
Drizzle the sauce evenly over the salmon and vegetables.
Fold and seal the foil to form packets, making sure they’re well sealed to trap in the steam.
Place the foil packets on a baking sheet and bake for 12–15 minutes, or until the salmon is fully cooked and the vegetables are tender.
