Light, fresh, and effortlessly elegant, Herby Baked Cod is the kind of recipe that proves healthy eating doesn’t have to be complicated. With just a handful of ingredients and under 20 minutes in the oven, this dish delivers clean, bright flavors and impressive nutrition in every bite.
Cod is a lean, high-protein fish that’s low in fat yet rich in essential nutrients like vitamin B12, iodine, and selenium—important for energy production, thyroid support, and immune function. Its mild flavor makes it the perfect canvas for bold herbs and citrus, allowing fresh dill, chives, garlic, and lemon zest to really shine in this simple herb marinade.
Baked rather than pan-fried, this method keeps the cod light and tender while using heart-healthy olive oil to lock in moisture and flavor. Olive oil also adds a dose of monounsaturated fats, which have been linked to improved cholesterol levels and reduced inflammation.
This recipe is naturally gluten-free, low in carbs, and high in protein, making it a smart choice whether you’re looking to boost your overall wellness, support weight management, or simply enjoy a clean, satisfying meal. Paired with a crisp green salad, steamed vegetables, or roasted potatoes, Herby Baked Cod is a versatile main that fits seamlessly into any weeknight dinner rotation.
Quick to prepare and beautifully balanced, this is a go-to recipe for when you want something nourishing, flavorful, and refreshingly simple.
