Lemon Blueberry Blender Oats

Start your day off right with a morning boost: Lemon Blueberry Blender Oats! Bursting with vibrant flavors, this recipe combines wholesome ingredients like oats, banana, and chia seeds with the zesty tang of lemon and the sweet pop of blueberries. Blended to creamy perfection and baked to golden-brown goodness, these oats offer a nourishing start to your day. Topped with a dollop of coconut yogurt, they’re a deliciously satisfying way to fuel your morning routine.

Recipe

1 Tbsp chia seeds

 2 Tbsp water

 1/2 cups oatmeal, old fashioned

 1/2 banana

 1 tsp lemon zest

 1 Tbsp lemon juice

 1/4 almond milk, unsweetened (or milk of choice)

 1 Tbsp maple syrup

 1 Tbsp flax meal (optional)

 1/2 tsp cinnamon, ground

 1/2 tsp baking powder

 1/8 cups blueberries

 1 Tbsp coconut yogurt

How to Prepare

Combine chia seed and water in a small cup and whisk to combine. Set aside for 10 – 15 mins.

Preheat oven to 350°F.

Grease 8-ounce ramekin.

Add all ingredients to a blender, except the blueberries, and blend until smooth. 

Pour into a greased ramekin and stir in chocolate chips.

Place ramekin on a small baking sheet and bake for 25 minutes.

Let cool for 5-10 minutes. 

Top with coconut yogurt, if desired.
