2 Roasted Sweet Potatoes,  chopped

1 pound frozen California vegetables blend

2 cups vegetable broth

1 cup dairy-free milk

1 teaspoon each garlic powder and onion powder

Sea salt and black pepper, to taste

½ cup shredded vegan cheese (optional)

½ cup vegan sour cream (optional)

¼ bunch parsley, finely chopped

¼ cup fresh chives, chopped

Omnivore Option: 6 slices cooked uncured bacon, chopped

How to Prepare

Add chopped, cooked sweet potatoes, California blend, broth, milk, garlic powder,

onion powder, salt, and pepper to a medium pot over medium-high heat. Bring to a

simmer, then reduce heat to medium-low and cover. Simmer for about 10 minutes

or until California vegetables are tender.

Turn off the heat, then blend the soup using an immersion blender or place in batches in a high-speed blender. 

Serve in bowls topped with cheese, sour cream, parsley, chives, and bacon if desired.
