Recipe
Serves 4
1 sweet potato, cubed
2 tbsp. olive oil
salt & pepper
pinch chili powder
2 servings Turkey Chorizo (see recipe here)
14 oz. can black beans, drained
1 tsp. ground cumin
4 eggs
1 avocado, sliced
4 tbsp. cilantro, chopped
4 tbsp. Coconut yogurt
Salsa (Optional)
How to Prepare
Heat oven to 200°F.
Place the sweet potato onto a baking sheet, drizzle with olive oil,
season with a generous pinch of salt, pepper and chili powder, and toss to combine. Place the baking sheet into the hot oven and roast the sweet potato for around 20 minutes, until cooked.
While the sweet potato is cooking, make the Turkey Chorizo (see recipe here).
Place the black beans into a small pot, season with salt, pepper and ground cumin, then heat up gently over medium heat.
Fry the eggs to your liking.
Once the sweet potatoes are cooked, divide equally between 4 bowls. Top with the turkey chorizo, black beans and avocado. Then top with the fried egg, and garnish with cilantro and a spoon of yogurt.
