1 tablespoon coconut oil
1 large onion, chopped
4 garlic cloves, chopped
4 salmon fillets
2 zucchini, chopped
1 large leek, chopped
1 fennel bulb, chopped
1 carrot, chopped
2 cups vegetable broth
1 bunch Swiss chard
1 cup basil leaves, roughly chopped
1 teaspoon red chili flakes (optional)
½ bunch parsley, finely chopped
How to Prepare
Add coconut oil to a large soup pot over medium heat. When the oil has melted, add onion and garlic. Stir for about 3 minutes. Next, chop the salmon into bite-sized pieces, then add to the pot. Add zucchini, leek, fennel, and carrot. Stir for about 5 minutes, then add vegetable broth. Cover and simmer for about 15 to 20 minutes or until the vegetables are soft.
