Serves 4
1 tablespoon coconut oil
1 large onion, chopped
4 garlic cloves, chopped
4 salmon fillets
2 zucchini, chopped
1 large leek, chopped
1 fennel bulb, chopped
1 carrot, chopped
2 cups vegetable broth
1 bunch Swiss chard
1 cup basil leaves, roughly chopped
1 teaspoon red chili flakes (optional)
½ bunch parsley, finely chopped
How to Prepare
Add coconut oil to a large soup pot over medium heat. When the oil has melted, add onion and garlic. Stir for about 3 minutes. Next, chop the salmon into bite-sized pieces, then add to the pot. Add zucchini, leek, fennel, and carrot. Stir for about 5 minutes, then add vegetable broth. Cover and simmer for about 15 to 20 minutes or until the vegetables are soft. Uncover and add the Swiss chard, basil, and chili flakes (optional). Stir well and cook on high heat for another five minutes to allow some of the liquid to evaporate. Stir in chopped parsley before serving.
