Paleo Pumpkin Spice Latte (No Coffee, No Caffeine)

We’ve crafted the perfect recipe for a Paleo Pumpkin Spice Latte that’s not only coffee-free and caffeine-free but also topped with a luscious coconut whipped cream. This comforting beverage brings all the cozy flavors of autumn to your mug without compromising your dietary choices. Recipe

For the latte:

1 cup unsweetened almond milk (or coconut milk for a creamier version)

1/4 cup pumpkin puree

1 tbsp maple syrup (adjust to taste)

1 tsp vanilla extract

1/2 tsp pumpkin pie spice (or a mix of cinnamon, ginger, nutmeg, and allspice)

Pinch of sea salt

Optional: 1 tbsp collagen peptides for added protein

For the coconut whipped cream:

1 can full-fat coconut milk, refrigerated overnight

1 tsp vanilla extract

1 tsp maple syrup (optional)

How to Prepare

For the coconut whipped cream:

Open the chilled can of coconut milk without shaking it. Scoop out the solid cream that has risen to the top into a mixing bowl. (Save the liquid for smoothies or other recipes.)

Add vanilla extract and maple syrup (if using) to the coconut cream.

Using an electric mixer, whip the cream until light and fluffy, about 3-5 minutes.

Refrigerate until ready to use.

For the latte:

In a small saucepan, whisk together the almond milk and pumpkin puree over medium heat.

Add the maple syrup, vanilla extract, pumpkin pie spice, and sea salt. Whisk to combine.

Heat the mixture, whisking frequently, until it’s hot and steaming (but not boiling).

If using collagen peptides, add them now and whisk until fully dissolved.

Remove from heat and use an immersion blender or transfer to a regular blender to blend until frothy.

Pour into a mug and top with a generous dollop of coconut whipped cream.

Sprinkle with additional pumpkin pie spice if desired.
