SALAD
1 small watermelon, cut into 1″ cubes
1/2 red onion, finely chopped
4 Tbsp fresh mint, plus extra for garnish
2 Tbsp extra virgin olive oil
sea salt & black pepper, to taste
2 yellow peaches, sliced
1 english cucumber, finely diced
1 cup red cabbage, shredded
4 cups romaine lettuce, chopped
plant based feta (optional)
DRESSING
4 Tbsp extra virgin olive oil
3 Tbsp red wine vinegar
3 garlic cloves, chopped
1 shallot, chopped
1 tsp dried oregano
sea salt & black pepper, to taste
How to Prepare
1) Combine the watermelon, red onion and mint in a large bowl with the olive oil. Season mixture with salt and pepper and toss to combine. Transfer to a fridge and let marinate for at least 1 hour.
2) In a small bowl whisk together the dressing ingredients and set aside.
3) Remove the watermelon from fridge and add in the sliced peaches and cucumbers. Toss to combine.
4) Divide the romaine and cabbage between 6 plates or containers. Top with the watermelon peach mixture then drizzle with dressing.
5) Garnish with more mint and any other toppings as desired and enjoy!
