Power Butter

This Power Butter is a nutrient-dense spread made from a blend of seeds, coconut oil, and almond butter—ideal for adding plant-based energy and essential nutrients to your day. Lightly toasted pumpkin, sesame, and chia seeds create a rich, nutty flavor while contributing beneficial minerals like zinc, magnesium, and calcium.

The combination of almond butter and coconut oil provides a source of healthy fats that support sustained energy and nutrient absorption. A touch of maple syrup adds natural sweetness, balancing the deep, roasted seed flavors. This versatile spread pairs well with fruit, gluten-free  toast, or rice cakes, and can also be used as a topping for oatmeal or smoothies.

Easy to make and store, Power Butter is a simple way to include more wholesome fats, protein, and micronutrients in your everyday routine.

Recipe

Serves 12

3.5 oz. (100g) coconut oil

2.5 oz. (70g) pumpkin seeds

1.8 oz. (50g) sesame seeds

3 tbsp. chia seeds

13 oz. (375g) unsweetened almond butter

1 tbsp. (0.5 oz) maple syrup

How to Prepare

In a large skillet, heat the coconut oil and pumpkin seeds over medium heat, stirring occasionally, for about 3 minutes, or until the oil melts and the seeds start to turn golden.



Add the sesame seeds and chia seeds. Cook for about 2 minutes, stirring constantly, until the sesame seeds are golden.



Transfer the warm seed mixture and oil to a large bowl. Add the almond butter, maple syrup, and 1 tsp salt. Stir until smooth. Let cool to room temperature.



Store in an airtight container at room temperature for up to 2 weeks.



Serving Suggestion: Spread on rice cakes with sliced banana..
