Pumpkin Seed Pesto

Recipe

Serves 2-3

1 cup pumpkin seeds

1 cup hot water

1 handful fresh basil

1 handful fresh parsley

2 cloves garlic

Juice of   lemon

2 tablespoons extra virgin olive oil

Sea salt and black pepper, to taste

Carrot stick, celery sticks, and sliced radishes, to serve

How to Prepare

Soak pumpkin seeds in hot water for 1 hour. Drain well and discard water.

Add seeds, basil, parsley, garlic, lemon juice, oil, salt and pepper to a food processor or blender. Puree until smooth. Serve pesto chilled or at room temperature with veggies for dipping.
