Couscous, a quick-cooking grain, provides a light, fluffy base that soaks up flavor while offering a subtle nuttiness. It’s naturally low in fat and—when made with a gluten-free variety—suitable for a wide range of diets. The fresh veggies like cucumber, cherry tomatoes, and red onion bring crunch and hydration, while parsley and mint add a refreshing, herbaceous punch. The optional plant-based feta adds a creamy, tangy touch that elevates each bite.

This salad is proof that healthy eating doesn’t need to be complicated. With minimal prep and simple ingredients, you can whip up a colorful, nutrient-packed dish in under 20 minutes. Serve it solo, pair it with your favorite protein, or pack it up for meals on the go—this one’s as versatile as it is delicious.
