Recipe

Serves 4

10 fl oz. (300ml) coconut milk

7 oz. (200g) raspberries, fresh or frozen

4 tbsp. chia seeds

8 tbsp coconut yogurt, to serve

8 tbsp. Chocolate Granola, to serve (Recipe here)

handful of berries, to serve

How to Prepare

Add the raspberries and milk to a blender and blend until smooth.



If the mixture is very thick, add a little more milk and blend again.



Transfer the mixture to a bowl or container. Add the chia seeds and stir well to evenly distribute.



Cover and refrigerate for at least 2 hours, or until thickened.



Remove from the refrigerator and stir well. If the pudding is too thick, add a splash of milk to loosen.



Spoon the chia pudding into serving glasses. Top with a layer of yogurt, then finish with granola and fresh fruit if desired.
