Roasted Eggplant with Herby Couscous

Roasted Eggplant with Herby Couscous

There are plant-based meals that feel genuinely complete — visually beautiful, deeply satisfying, and nourishing in the fullest sense of the word — and this Roasted Eggplant with Herby Couscous is exactly that. Golden, fragrant, and layered with texture and flavor, this is the kind of recipe that demonstrates with absolute clarity why whole-food, plant-based cooking is not a compromise but a celebration. Every component has been chosen with both intention and pleasure in mind, and together they create something that is as impressive to serve as it is extraordinary for your health.

Eggplant is a wonderfully underappreciated functional food, and roasting it at high heat is the most transformative way to prepare it — concentrating its natural sweetness, developing a deeply golden exterior, and creating that meltingly tender, almost creamy interior that makes it such a satisfying centerpiece for a plant-based meal. From a functional nutrition perspective, eggplant is rich in nasunin — a powerful anthocyanin antioxidant found predominantly in its deep purple skin that has been studied for its ability to protect cell membranes from oxidative damage and support healthy brain function by scavenging free radicals in brain tissue. Eggplant also delivers meaningful amounts of chlorogenic acid, one of the most potent antioxidant compounds found in plant foods, alongside fiber, potassium, and B vitamins that support cardiovascular health, energy metabolism, and nervous system regulation.

Gluten-free couscous provides the light, fluffy base that carries the vibrant herby filling, offering easily digestible complex carbohydrates that support steady, sustained energy alongside a gentle dose of B vitamins. Fresh parsley and cilantro stirred generously through the couscous are far more than garnish — both herbs are extraordinarily rich in vitamins K and C, chlorophyll, and a broad spectrum of volatile oils with documented antioxidant and anti-inflammatory properties. Cilantro in particular has been studied in functional medicine for its role in supporting the body’s natural heavy metal detoxification pathways, making it a genuinely therapeutic addition to any whole-food meal.

Chickpeas woven through the couscous extend the protein and fiber content of this dish considerably, contributing prebiotic inulin fiber that feeds beneficial gut bacteria and supports the microbiome diversity that functional medicine increasingly recognizes as foundational to whole-body health. Sun-dried tomatoes bring an intensely concentrated burst of lycopene — the powerful carotenoid antioxidant whose bioavailability increases with processing and concentration, making sun-dried tomatoes one of the most therapeutically potent tomato products available — alongside a deep, savory richness that elevates the entire filling.

The lemon tahini sauce that brings this dish together is as functional as it is irresistible. Tahini — made from ground sesame seeds — is a concentrated source of calcium, zinc, copper, and selenium alongside healthy monounsaturated fats that support cardiovascular health and enhance the absorption of fat-soluble nutrients throughout the meal. Fresh lemon juice and zest brighten every element of this dish while supporting liver detoxification pathways, with lemon zest contributing d-limonene — a bioactive compound with well-documented liver-supportive and anti-inflammatory properties. A touch of maple syrup balances the tahini’s natural bitterness with gentle, mineral-rich sweetness.

Roasted, filled, drizzled, and deeply nourishing — this Roasted Eggplant with Herby Couscous is plant-based cooking at its most beautiful, its most intentional, and its most satisfying.

Recipe

Serves 2

2 eggplants

3.5 oz. (100g) gluten-free couscous

1 shallot, diced

0.14 oz. (4g) fresh parsley, finely chopped

0.14 oz. (4g) fresh cilantro, finely chopped

1 lemon, juice & zest

3.5 oz. (100g) canned chickpeas

2.1 oz. (60g) sun-dried tomatoes, drained, diced

1.6 oz. (45g) tahini

3 tsp. maple syrup

How to Prepare

Preheat the oven to 410°F (210°C).

Halve the eggplant lengthwise. Sprinkle with salt and let sit face-up for 5-10 minutes to let out our moisture.

Pat dry, brush with 2 tbsp olive oil, and season with salt and pepper. Place cut-side up on a lined baking sheet and roast for 25-30 minutes until soft and golden.

Cook couscous according to package instructions.

Fluff couscous with a fork, then stir in herbs, shallot, tomatoes, chickpeas, salt, pepper, and a drizzle of lemon juice.

In a small bowl, whisk tahini, remaining lemon juice, 1-2 tbsp. water, maple syrup, and a pinch of salt. Add more water to loosen if needed.

Remove eggplant from the oven. Use the back of a spoon to gently press the flesh and create a cavity.

Fill with couscous and drizzle with tahini sauce. Serve immediately.
