Savory Open-Faced Waffles Recipe
Serves 1
1 gluten-free waffle, toasted (We like Birch Benders Paleo Waffles)
½ avocado, sliced
1 teaspoon coconut oil
1 egg
½ tomato, sliced
Sea salt and black pepper, to taste
How to Prepare
Toast the waffle, then lay the avocado slices on top. Set aside.
Heat oil in a small skillet over medium heat. When hot, fry the egg to medium-well.
Place fried egg on top of the avocado, then top with tomato slices. Season with salt and pepper, then enjoy.
