Recipe

1.5 lbs boneless, skinless chicken breast

2 tbsp olive oil

1 medium zucchini, diced

1 red bell pepper, sliced

1 cup cherry tomatoes, halved

1 can (14 oz) artichoke hearts, drained and quartered

3 cloves garlic, minced

1 cup chicken broth (low sodium) (We like Kettle & Fire)

1 tbsp Italian seasoning

1/2 cup Kalamata olives, pitted

Salt and pepper to taste

How to Prepare

Season chicken with salt, pepper, and half the Italian seasoning.

Heat olive oil in a large skillet over medium-high heat.

Cook chicken breasts for 4-5 minutes per side until golden, then remove to a plate.

In the same skillet, add garlic and cook for 1 minute.

Add zucchini and bell peppers, cooking for 3-4 minutes.

Pour in chicken broth and add remaining seasoning.

Return chicken to the skillet, nestling it among the vegetables.

Cover and simmer for 10-12 minutes until chicken reaches 165°F.

Add cherry tomatoes, artichoke hearts, and olives, cooking uncovered for 5 more minutes.
