2 tbsp. olive oil
3 lbs. (1.3kg) beef short rib, cut into chunks
2 red onions, sliced
2 tbsp. fresh ginger, minced
4 cloves garlic, chopped
3 star anise
2 cinnamon sticks
1 tsp. chili flakes
2 oranges, zested & juiced
¾ cup (180ml) coconut aminos
1 ½ cups (360ml) beef broth
How to Prepare
Sear the Beef: Heat the olive oil in a large skillet over medium-high heat. Add the beef short ribs in batches, browning them on all sides for 2-3 minutes. Once browned, set aside on a plate.
Sauté the Aromatics: In the same skillet, add the sliced onions and cook for about 5 minutes until softened. Then, add the minced ginger, garlic, star anise, cinnamon sticks, chili flakes, orange zest, and juice. Cook for an additional 2-3 minutes until fragrant.
Deglaze the Skillet: Pour the coconut aminos and beef broth into the skillet with the onion and spice mixture. Bring the mixture to a boil, scraping up any browned bits from the bottom of the skillet to add flavor to the sauce.
Transfer to Slow Cooker: Place the browned short ribs in the slow cooker. Pour the sauce over the beef, ensuring the meat is mostly submerged in the liquid.
Cook: Cover the slow cooker with the lid and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is fall-apart tender.
Serve: Once cooked, let the beef rest in the slow cooker for 5-10 minutes before serving. Optionally, skim any excess fat from the surface of the sauce before serving.
