Recipe
Serves 4
1 lb boneless, skinless chicken breast, thinly sliced (450g)
1 lb fresh snap peas, trimmed (450g)
3 cloves garlic, minced (9g)
1 tbsp fresh ginger, minced (6g)
3 tbsp coconut aminos (45ml)
1 tbsp sesame oil (15ml)
2 green onions, sliced (30g, optional)
1 tsp sesame seeds (3g, optional)
Salt and pepper (to taste)

How to Prepare
Season chicken with salt and pepper.
Heat sesame oil in a large skillet or wok over high heat.
Add chicken and cook 5-6 minutes until golden and cooked through. Remove and set aside.
Add snap peas to the same pan and stir-fry 2-3 minutes until bright green and crisp-tender.
Add garlic and ginger, stir-fry 30 seconds until fragrant.
Return chicken to pan, add coconut aminos, rice vinegar, and sriracha if using. Toss everything together for 1 minute.
Garnish with green onions and sesame seeds if using. Serve immediately—delicious on its own or over rice or cauliflower rice for a complete meal.
