Spiced Greens

1 bunch collard greens, chopped

1 bunch rainbow chard, chopped

1 medium onion, cut into strips

1 red bell pepper, cut into strips

1 Tbsp of pine nuts

1 tsp turmeric, ground

1 tsp cumin, ground

1 tsp coriander

1 tsp cinnamon, ground

1 tsp chili powder, ground

1 tsp smoked paprika

1 tsp red pepper flakes

1/4 cup vegetable broth

salt, to taste

How to Prepare

Wash and chop greens. 

Chop the onion and bell pepper.

Measure spices into a small bowl. Set aside. 

Roll your washed greens in a cigar-like fashion and slice. Set aside. 

In a pot, add the broth, onions, salt and pepper (to taste) and let it sweat for about 2 minutes over medium heat. 

Add bell pepper and sauté for about one minute. Add all spices to the pot and sauté until fragrant, about 30 seconds. 

Add in the collards and rainbow chard, mix well. Place lid on pot and steam for about 3 minutes. 

Add the pine nuts. 

Adjust seasoning if necessary and serve.
