Recipe

1/2 pound shrimp, peeled

1/2 cup brown rice, uncooked

1 bell pepper, sliced

1 cup broccoli florets

1/2 onion, sliced

2 garlic cloves, minced

Cajun Sauce

1 tbsp olive oil

1 tbsp Cajun seasoning

1/2 tbsp hot sauce

1/2 tbsp lemon juice

1/2 tsp paprika

Salt to taste

How to Prepare

Cook rice according to package directions (typically 1:2 ratio with water, simmer 45 mins) or use pre-cooked rice.

While rice cooks, slice all vegetables.

Mix sauce ingredients in a small bowl.

Heat pan over medium-high heat. Sauté onions 3-4 mins until softened. Add bell peppers and broccoli, cook 4-5 mins.

Remove vegetables, set aside.

In the same pan, add shrimp and sauce. Cook 2-3 mins per side until pink.

Divide rice between bowls. Top with vegetables and shrimp. Drizzle with any remaining sauce.
