Spinach, Zucchini & Pea Frittata

Spinach, Zucchini & Pea Frittata

Versatile, vibrant, and genuinely nourishing from the very first bite, this Spinach, Zucchini & Pea Frittata is the kind of recipe that works beautifully at any time of day — a light, protein-rich lunch, a satisfying dinner, or an impressive centerpiece for a relaxed weekend brunch. Built entirely from whole-food ingredients and ready in under thirty minutes, it is functional nutrition made wonderfully effortless, with a nutritional profile that quietly supports your body at every level.

Eggs form the rich, golden foundation of this frittata, and they anchor the dish with one of the most complete and bioavailable nutritional profiles of any whole food available. Rich in all nine essential amino acids, eggs provide complete protein to support muscle repair, immune function, hormone production, and the enzymatic processes that underpin virtually every system in the body. They are one of the few significant dietary sources of choline — a nutrient critical for brain health, liver function, and the structural integrity of every cell membrane — and yet one that remains chronically underconsumed in most modern diets. The healthy fats naturally present in eggs also support the absorption of the fat-soluble vitamins and carotenoids abundant throughout the vegetables in this recipe, creating a beautiful example of whole-food synergy at work.

Baby spinach woven through the egg base and layered on top brings an exceptional micronutrient profile to every slice. One of the most nutrient-dense leafy greens available, spinach delivers magnesium, folate, vitamin K, iron, and a broad spectrum of antioxidants including lutein and zeaxanthin — two carotenoids with particularly well-documented roles in supporting eye health, protecting against oxidative damage to the macula, and maintaining long-term visual function. Magnesium alone supports over 300 enzymatic processes in the body, from energy production and nervous system regulation to blood sugar balance and muscle function — and yet it remains one of the most common micronutrient deficiencies in adults. Blending a portion of the spinach directly into the egg mixture ensures its nutrients are distributed throughout every bite while creating that beautiful, vibrant green color that makes this frittata as visually striking as it is nourishing.

Zucchini contributes a gentle, mild flavor alongside meaningful amounts of vitamin C, potassium, and antioxidant compounds including lutein and beta-carotene, while frozen green peas add a pop of natural sweetness alongside plant-based protein, vitamin K, and additional prebiotic fiber that feeds and sustains a healthy gut microbiome. Green onions bring a fresh, mild bite and further prebiotic activity to the dish, quietly supporting the microbiome diversity that functional medicine increasingly recognizes as foundational to whole-body wellness.

Plant-based ricotta blended into the egg base creates an extraordinary lightness and creaminess in the finished frittata, while plant-based feta added in the final minutes of baking melts into tangy, savory pockets of flavor that make every slice something genuinely special. Together, these plant-based cheeses keep this recipe fully accessible to those following dairy-free, anti-inflammatory, or plant-forward nutritional protocols without compromising a single element of the eating experience.

Simple, beautiful, and deeply nourishing — this Spinach, Zucchini & Pea Frittata is functional eating at its most colorful, its most versatile, and its most satisfying.
