1.3 lbs. (600g) boneless, skinless chicken thighs
1 tbsp. Cajun seasoning
1 tsp. smoked paprika
1 tsp. onion granules
1 tsp. garlic granules
1 tsp. oregano
For the Cajun lime sauce:
1 shallot, finely chopped
3 cloves garlic, crushed
1 red bell pepper, finely chopped
1 tsp. smoked paprika
1 tsp. Cajun seasoning
6.8 fl oz. (200ml) chicken stock
5 fl oz. (150ml) coconut cream
3.5 oz. (150g) cherry tomatoes
1 lime, cut in half
How to Prepare
Drizzle the chicken thighs with ½ tablespoon of olive oil, season with spices, salt and pepper.
Heat ½ tablespoon more of olive oil in a large, deep pan skillet over high heat. Sear the chicken thighs for 3-4 minutes on each side, then remove from the skillet and set aside.
In the same skillet, sauté the shallot, garlic, and pepper over medium-low heat for 5 minutes, stirring regularly, until soft. Now add the spices, chicken stock and cream, stir to combine and bring the pan to a simmer.
Add the chicken thighs back to the pan, along with the cherry tomatoes and lime. Cover the pan and leave to cook over medium heat for 15-20 minutes, until cooked through, stir occasionally.
