4 clementines, peeled & sliced into rounds
8.8 oz. (250g) cooked wholegrain rice
1 small red onion, thinly sliced
2.8 oz. (80g) arugula (rocket)
0.5 oz. (15g) fresh mint, sliced
1.8 oz. (50g) roasted pistachios, chopped
1.8 oz. (50g) pomegranate seeds
For the dressing:
zest & juice of 2 clementines
1 tsp. maple syrup (optional)

How to Prepare
Whisk clementine zest and juice with 1 tbsp. red wine vinegar, maple syrup, 3 tbsp. olive oil, and a pinch of salt to make the dressing.
Combine rice, red onion, arugula, and mint in a bowl. Toss with dressing.
Top with clementine slices, pistachios, and pomegranate seeds. Serve immediately.
