Recipe

Serves 4

12 oz. (340g) tomatoes, chopped, divided

10.5 oz. (300g) red lentils, rinsed

4 cloves garlic, chopped

½ oz. (15g) basil, chopped

2 oz. (60g) tomato paste

1 tsp. dried oregano

Juice of 1 lemon

6 fl oz. (180ml) oat cream

How to Prepare

In a slow cooker, add lentils, garlic, 10 oz (280g) tomatoes, tomato paste, 2 tbsp olive oil, 1 tbsp salt,  oregano, 1 tsp black pepper, and 50.7 fl oz (1.2L) water. Cook on high for 4 hours.



Mix soup with a wooden spoon to break down lentils and tomatoes. Stir in remaining tomatoes, chopped basil, lemon juice, and cream.



Adjust seasoning. Thin with extra water if needed.
