Recipe
1½ cups almond flour
¼ cup coconut flour
1 scoop (30g) vanilla protein powder
3 tbsp monk fruit sweetener
2–3 tbsp unsweetened shredded coconut
2 large eggs
¼ cup coconut oil, melted
2 tbsp almond milk
1 tsp vanilla extract
½ tsp baking soda
¼ tsp sea salt
Zest of 1 orange
½ cup dried cranberries (or other dried chopped fruits)
Optional: ¼ cup chopped almonds

How to Prepare
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, mix together all dry ingredients: almond flour, coconut flour, protein powder, monk fruit sweetener, shredded coconut, baking soda, sea salt, and orange zest.
In a separate bowl, whisk the eggs, melted coconut oil, almond milk, and vanilla extract until smooth.
Add the wet mixture to the dry ingredients and stir until a dough forms.
