How to Prepare
Preheat the oven to 390°F (200°C). Mix harissa paste, 1 tbsp. olive oil, and breadcrumbs into a spreadable paste. Spread over the cod filets and bake for 12-15 minutes.
Meanwhile, add beans (with liquid), garlic, coconut milk, and 1.7 fl oz. (50ml) water to a pot. Simmer for 10-15 minutes until thickened. Remove and discard the garlic.
Stir in parsley,Plant Based Parmesan cheese, and lemon juice. Season with salt and pepper.
Serve the cod over the creamy beans. Garnish with chili flakes and extra cheese and parsley if desired.
