Fall is in the air and that means one thing – pumpkin season is upon us! These maple pumpkin oatmeal bars are the perfect way to celebrate. They’re easy to make, delicious, and perfect for a quick breakfast or snack. Enjoy!
Recipe
2-1/2 cups old fashioned oats, divided
1 cup unsweetened almond milk
1/2 cup pumpkin puree
1/4 cup coconut oil, melted
1 flax “egg”
1 tsp pure vanilla extract
2 Tbsp chia seeds
1 tsp pumpkin pie spice
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp sea salt
1/3 cup pecan halves, chopped
How to Prepare
Preheat the oven to 350F and grease an 8×8″ baking pan with nonstick spray.
Make your flax “egg” by adding 1 Tbsp flaxseed meal with 2 Tbsp water. Mix well and allow to sit for 5 minutes.
Add 1 cup of the oats to a food processor and blend until it is flour. Set aside.
Add the milk, pumpkin puree, syrup, oil, flax “egg” and vanilla to a large bowl then whisk to combine.
Add the remaining 1-1/2 cups oats, oat flour, chia seeds, pumpkin pie spice, baking powder, baking soda and salt then stir to combine. Fold in the chopped pecans then pour batter into the prepared pan.
Bake for 40-45 minutes or until the edges are golden and the center is set. Check at the 30 minute mark and if browning too quickly put a piece of foil on top.
Cool before slicing into bars then store in the fridge.
