Recipe

1 lb. (454g) cooked chicken breast or thighs, diced or shredded

¼ tsp. ground turmeric

½ tsp. garlic powder

½ tsp. onion powder

¼ tsp. paprika

1 tbsp. tahini

4 fl oz. (120ml) oat milk

4 slices of gluten-free bread, toasted (to serve)

1 avocado, mashed (to serve)

Chopped parsley, to garnish

How to Prepare

In a bowl, combine turmeric, garlic powder, onion powder, and paprika. Add tahini and oat milk, mixing into a smooth paste.

Add the cooked chicken chunks to the bowl, tossing to coat them evenly in the spice mixture.

Heat a non-stick skillet over medium heat and add the coated chicken. Cook for 3-4 minutes, stirring occasionally, until heated through and slightly browned.

While the chicken warms, prepare the gluten-free toast and mash the avocado.

Divide the mashed avocado evenly onto the toasted bread slices. Top with the chicken scramble.

Garnish with chopped parsley and enjoy!
