2 tablespoons coconut oil
8 small lamb chops (about 1-inch thick)
1 shallot, thinly sliced
1 teaspoon dried thyme
2 teaspoons dried rosemary
sea salt, garlic powder, and black pepper, to taste
½ cup chicken broth
2 tablespoons white wine vinegar
1 tablespoon maple syrup (optional)
¼ cup minced fresh mint leaves
How to Prepare
Add oil to a large skillet over medium heat. When hot, add lamb, shallots, and dry seasonings. Saute chops until a dark golden brown color forms underneath, about 5 minutes. Flip over then cook until the same color forms on the other side.
Transfer chops to a plate, then return the skillet to the heat. Add broth, vinegar, and maple syrup to the pan. Cook, stirring constantly until thickened, about 1 minute.
