Recipe

Makes 12

5.3 oz. (150g) cashews

4.2 oz. (120g) shredded coconut

3 tbsp. maple syrup

2 fl oz. (60ml) lemon juice

2 tbsp. lemon zest

2 tbsp. chia seeds


To coat:

1.2 oz. (33g) unsweetened desiccated coconut

How to Prepare

In a food processor, blend cashews and shredded coconut into a coarse meal.



Add maple syrup, lemon juice, and zest. Blend until a sticky dough forms.



Add chia seeds and pulse to mix. Adjust texture with more coconut or water as needed.



Roll dough into 1-tbsp. balls and coat in desiccated coconut. Chill on parchment. Store in the fridge for up to 1 week.
