Recipe
1 can chickpeas (15 oz), drained and rinsed
1/2 cup gluten-free old-fashioned oats
1/3 cup almond butter
2 tablespoons honey
1-2 teaspoons monk fruit sweetener (adjust to taste)
1/4 cup cocoa powder
2 tablespoons chia seeds
2 tablespoons ground flax
1/4 cup chopped walnuts
3 tablespoons dairy-free mini chocolate chips
1 teaspoon vanilla extract
1/4 teaspoon salt

How to Prepare
Drain and rinse chickpeas very well, pat completely dry.
Blend chickpeas in a food processor/blender until smooth.
Add remaining ingredients except walnuts and chocolate chips.
Blend until well combined.
Stir in chopped walnuts and chocolate chips.
Refrigerate mixture 1-2 hours.
Roll into 12 balls (If sticky, slightly wet hands).
Refrigerate balls for 30 minutes to set.
